- 10 gr. Levadura fresca
- 500 gr. Harina de fuerza

- Sobre una superficie enharinada, dividimos la masa en tres partes aplastamos ligeramente y damos forma de barra, espolvoreamos con harina, cubrimos con un pa帽o h煤medo o con film transparente y dejamos reposar para que suban de volumen. (30 minutos).
- Volvemos a aplanar suavemente, formando un rect谩ngulo procurando no soltar el aire. Volvemos a formar barras con cada rect谩ngulo y pellizcando las puntas con los dedos para sellarlas. Alargamos en forma de barra para formar baguettes rozando hacia delante y atr谩s desde el centro hacia los extremos.
- Ponemos cada baguettes sobre papel de hornear levantando para evitar que se toquen entre ellas. Volvemos a cubrir con film transparente o un trapo h煤medo y dejamos subir otros 45 minutos.
- 20 minutos antes de que termine el tiempo de reposo, introducimos dos bandejas en el horno, una a medida altura y la otra en la balda inferior, precalentamos el horno a 250° C.
- Preparamos 100 gr. de agua muy caliente. Con un cuchillo hacemos tres cortes diagonales en cada barra y espolvoreamos con harina. Ayud谩ndonos del papel colocamos cada baguettes en la bandeja superior y con mucho cuidado vertemos los 100 gr. de agua caliente en la bandeja inferior, cerramos r谩pidamente la puerta del horno. (Esto har谩 que las baguettes queden crujientes).
- Horneamos durante 20 minutos a 250°. (si vemos que se tostan demasiado, bajaremos la temperatura del horno a 230° C). Dejamos enfriar 20 minutos antes de cortarlas.
