- Lo primero que vamos a preparar son los mejillones. Para ello los limpiamos bien quitándoles las barbas (ya venían bastante limpios) e impurezas. Los ponemos en la cazuela con un vaso de vino blanco y otro de agua, les ponemos la tapa y cuando veamos que se van abriendo, los tendremos preparados.
- El caldo que ha sobrado, lo colamos y los reservamos. En una picadora o en la Thermomix, ponemos los tomates, el pimiento y la cebolla y la picamos bien. Reservamos.
- En la paellera, ponemos un chorretón de aceite de oliva y doramos los langostinos y las cigalas. Reservamos. Sobre este aceite ponemos los ajitos, cuando empiecen a dorarse añadimos los calamares y el rape en dados pequeños. Cuando coja color, añadimos el triturado de tomate, pimiento y cebolla. También incorporamos el pimentón y el tomate concentrado. Cocinamos unos minutos.
- Añadimos el fideo que lo rehogaremos bien y el azafrán. Ya sólo queda añadir el caldo. Para ello debemos poner el doble de caldo que de fideos. En este caso utilicé el caldo de los mejillones y el resto simplemente agua, aunque se puede utilizar caldo de pescado. Incorporamos los langostinos, las cigalas y los mejillones. Dejamos a temperatura media durante 8 o 10 minutos. Y ya tenemos lista nuestra fideuá.
- Si nos gusta podemos poner los fideos al horno para conseguir ese tostado tan característico.
