La “escalivada” es un plato típico de Cataluña y consiste en asar verduras como berenjenas, pimientos, tomates y cebollas. Su nombre procede del verbo “escalivar” que en catalán significa: asar al rescoldo. Una vez asadas se sirven con un chorrito de aceite de oliva y es un perfecto acompañante para cualquier plato.
Ésta es una forma distinta de presentarla y consiste en triturar las verduras y emulsionarlas con el aceite de oliva, ¡¡¡delicioso!!!. Y más aún si lo servimos sobre rebanadas de pan tostado y acompañado de unas ricas anchoas de mi tierruca.

- 1 cebolla (250 gr.)
- 1 berenjena grande (300 gr.)
- 2 pimientos rojos (400 gr.)
- 2 o 3 tomates maduros (400 gr.)
- 1 cucharadita de sal
- 100 gr. de aceite de oliva virgen extra
- 24 filetes de anchoa en aceite de oliva

- Precalentamos el horno a 220º.
Colocamos las verduras enteras, lavadas y pinceladas con aceite de oliva en una bandeja del horno. Horneamos a 200º durante 50-60 minutos. Cuando las verduras estén asadas, cubrimos la bandeja con papel de aluminio y dejamos reposar unos minutos (de esta manera podremos quitarles la piel con más facilidad). Dejamos enfriar.
Retiramos las piel y las semillas de las verduras asadas y las ponemos en el vaso de la Thermomix.
Añadimos la sal y programamos 1 minuto, a - Si queda un puré muy denso, agregamos un poco de líquido que queda en la bandeja de asar y trituramos durante 20 segundos más.
Colocamos un vaso o jarra pequeña sobre la tapa del vaso, pulsamos la tecla “balanza” y echamos el aceite hasta que pese los 100 gr.
Programamos a velocidad 5 y, sin quitar el cubilete, vertemos el aceite poco a poco sobre la tapa hasta que se haya integrado todo el aceite.
Tostamos unas rebanadas de pan y ponemos encima de cada una, una o dos cucharadas de la emulsió
